Homemade Apple Pie
Pie Dough Ingredients:
2 1/2 cups all-purpose flour, plus more for dusting
2 tablespoons sugar
1/4 teaspoon fine sea salt
2 sticks cold unsalted butter, cut into 1/2-inch cubes
1 1/4 cups packed grated sharp Cheddar (about 6 ounces)
4 tablespoons ice water, or more as needed
Combine the flour, sugar and salt in a medium bowl. Using either your hands or a food processor, cut the butter into the flour until it resembles fine sand. Add the cheese and mix until combined.
Slowly pour the water in, small amounts at a time, until it forms together without any resistance.
Knead into a formed ball, then divide and flatten into two discs. Wrap in plastic wrap and place in the refrigerator for at least 30 minutes.
Roll the dough out on a floured surface big enough to let the dough hang off the sides of the pie dish. Reserve the other dough.

2 tablespoons cornstarch
1/3 cup sugar
2.25 pounds granny smith apples (about 5 large apples), peeled, cored and thinly sliced
juice of 1 lemon
Pinch of fine sea salt
1 beaten egg, for brushing
