Homemade Apple Pie With Cheddar Cheese

This easy homemade apple pie recipe from scratch is delicious and simple to make, and whoever came up with the idea of adding cheddar cheese into the mix, was quite simply a genius. We all love cheese as a topping or a side dish, but when you can put the cheese inside the recipe, it gives you so much more flavor to enjoy, when the cheese melts together all the ingredients for that fabulous gooey texture and taste.

Homemade Apple Pie

Pie Dough Ingredients:

2 1/2 cups all-purpose flour, plus more for dusting
2 tablespoons sugar
1/4 teaspoon fine sea salt
2 sticks cold unsalted butter, cut into 1/2-inch cubes
1 1/4 cups packed grated sharp Cheddar (about 6 ounces)
4 tablespoons ice water, or more as needed

Combine the flour, sugar and salt in a medium bowl. Using either your hands or a food processor, cut the butter into the flour until it resembles fine sand. Add the cheese and mix until combined.
Slowly pour the water in, small amounts at a time, until it forms together without any resistance.
Knead into a formed ball, then divide and flatten into two discs. Wrap in plastic wrap and place in the refrigerator for at least 30 minutes.
Roll the dough out on a floured surface big enough to let the dough hang off the sides of the pie dish. Reserve the other dough.
Apple Filling Ingredients:

2 tablespoons cornstarch
1/3 cup sugar
2.25 pounds granny smith apples (about 5 large apples), peeled, cored and thinly sliced
juice of 1 lemon
Pinch of fine sea salt
1 beaten egg, for brushing
